Rome

Fly to Rome. On arrival you will be met and transferred to your hotel.

Buongiorno! Welcome to Italy.

Your adventure begins with a welcome meeting at 6:00pm on Day 1.

You can arrive at any time as there are no activities planned until this important meeting. Please look for a note in the hotel lobby or ask the hotel reception where it will take place. If you can't arrange a flight that will arrive in time, you may wish to arrive a day early so you're able to attend. We'll be happy to book additional accommodation for you (subject to availability). If you're going to be late, please inform the hotel reception. We'll be collecting your insurance details and next of kin information at this meeting, so please ensure you have all these details to provide to your leader.

Home to artistic treasures, renowned sights, celebrated fashion and some of the tastiest food on the planet, Italy will surely impress. From Rome's ancient streets to the romantic canals of Venice, be seduced by a slice of La Dolce Vita.

There are so many things to do in Rome, we recommend you arrive a few days early to see the all sights, such as the Colosseum and Arch of Constantine, the Forum (centre of ancient Rome), the Victor Emmanuel Monument, the Pantheon, the Trevi Fountain, Piazza Navona, the Spanish Steps, Via Condotti and Piazza Venezia.

No visit would be complete without a trip to Vatican City and St Peter's Basilica. Entry to the Basilica is free, and there's a small charge to climb the dome for the ultimate breathtaking panorama over bella Roma.

Also make the time to visit the Vatican Museum and Sistine Chapel. The Vatican Museum is closed on some days, including most Sundays. On the last Sunday of the month, it's open and free (but expect large crowds). Check the Vatican website for these dates: www.vatican.va

Rome is a gastronomer's delight, with many restaurants and trattorias catering to any taste and budget. Local specialities tend to be quite heavy, and include pastas carbonara (egg, cheese and bacon) and amatriciana (tomato, bacon and chilli). Antipasto dishes are also very popular in Rome. Eating in trattorias will give you a chance to sample some Italian wines - house wines are usually very good and affordable. After dinner, a grappa, amaretto or sambucca is a great digestif.

This the morning we start the day with a coffee – the most important drink in Rome! Once you have had your caffeine hit we set off to visit local markets where you can try local fresh fruits and vegetables, and then grab lunch at one of the surrounding shops or buy cold meats, cheese and bread for the train trip to Assisi.

3-4

Assisi/Spello

Travel by train to Assisi (approx 4 hrs).

Assisi was the home of one of the world's most famous saints and founder of the Franciscan order - St Francis. Whatever your feelings about religion, it's a place which inspires reverence.

Take the train to charming Spello (approx 20 mins) to sample exclusive local wine and regional food specialties at an enoteca in this medieval town. Return to Assisi in the late afternoon.

One of the prettiest medieval towns in Italy, Spello is home to many ancient Roman monuments and charming enotecas serving local wine and regional food specialties.

Our accommodation for the next two nights is in an agriturismo where you get to try your hand at the regional tradition of olive-oil pressing. You'll also have time to tour the local wineries and try tasty regional dishes that sample the best produce in the area, including truffles and cheese.

5-6

Bologna

Travel to Bologna by train (approx. 3.5hrs).

Stroll the streets of this charming and delightfully untouristy town and admire the Palazzo Ducale.

Possibly the best thing about Modena is the rich selection of cuisine on offer. In addition to balsamic vinegar, specialities of Modena include prosciutto, tortellini and, for the adventurous, zampone (stuffed pig's trotter). Wash down these gourmet selections with Lambrusco, the famed Italian sparkling red wine.

Check out the bustling and friendly local markets with their selection of mouth-watering fresh produce, such as meats, cheese and balsamic vinegar (real and fake!) and fresh flowers. It also has an excellent local speciality panini shop in the market, which is great for lunch.

Visit an acetaia, a house where the family produce fine aged Modena balsamic vinegar in the attic. Owing to the time it takes to produce, and the fact that it needs the extremes of temperatures best found under the eaves of a domestic house, 'real' balsamic vinegar has never been produced in factories or commercial units. It's a traditional art practised by a few Modenese families in their own homes and the quality control laws imposed on the producers are extremely strict. The vinegar is aged in barrels made from different woods, and is never less than 12 years old and often well over 25. The end product bears no relation to the mass-produced balsamic vinegar most people are familiar with. Once you have tasted it, you will understand why top chefs rave about it!

In the region famed for introducing bolognese sauce to the world, participate in a cooking class in the heart of a regional food market after sampling Parmigiano-Reggiano cheese and Prosciutto di Parma of the Emilia-Romagna region.

Venice

Take the train up to Venice (approx 1hr 30mins).

A grand city of canals, Venice is built over a hundred small islands connected by 400 bridges. Still rich with artistic masterpieces, modern Venice combines history with contemporary life through food, performance, art and architecture.

There are only two ways to explore Venice - by boat or on foot. Some of the more popular sights include the Grand Canal, the shops of the Rialto Bridge, the Palace of the Doge (ruler of Venice), the Piazza and Basilica di San Marco and the Bridge of Sighs. Take the time to wander the narrow, cobblestone streets and spacious piazzas and cross the hundreds of tiny bridges, where shops, markets, galleries, churches and stunning buildings lie around every corner.

Venice is home to the iconic Rialto food markets, which have been trading for centuries, and one of Italy’s foremost wine-producing regions, best known for varietals including Bardolino and Valpolicella.

Be sure not to miss trying the popular dessert tiramisu - sponge cakes soaked in coffee and arranged in layers with mascarpone cheese - which is the speciality of this region.

Take the vaporetto (water bus) over to the island of San Giorgio to climb the bell tower for the best view of Venice.

You can't leave Venice without going on a classic Venetian gondola. It's a common way for visitors to see the major canal routes from a fascinating perspective.

Marca Trevigianan/Venice

Take the train 30km north of Venice to the quaint town of Treviso, reputedly the birthplace of the much-loved dessert, tiramisu.
From here we will take our own private bus and tour some of the region’s food highlights. Start at an agriturismo on the slopes of Monte Cesen, where they make famous mountain cheese. See a demonstration from the cheese maker and enjoy a cheese tasting as a late breakfast. Note: this activity is seasonal and will take place between May and September, weather permitting.
Next, discover the secrets to creating the perfect salami. Our host, Cesare de Stefani, will show us around his salami and sausage “factory” where we can see all the steps it takes to make this iconic Italian flavour sensation.
The region is also famous for the sparkling wine varietal, Prosecco, so on our next stop we sample a glass of the local bubbly.
Time permitting, we finish our tour in Treviso, the charming pearl of “La Marca”. Treviso is home to a twice- over Italian champion gelato-maker. Learn the art of churning your favourite flavour from the experts. 
If you’re still hungry, grab dinner at one of Treviso’s charming local haunts, before catching the train back to Venice.

9

Venice

It's an early start on your final morning as we head out to the farmers markets. You have the chance to chat to local farmers and also pay a visit to the fish market, all before breakfast begins. The trip finishes around 11 am but before you sign off on this delicious adventure you may want to try one of Venice's sublime tiramisu.

Your adventure ends and you will be transferred to the airport for your overnight flight home.
