Vietnams Culinary Delights?!?!
I'm off to Vietnam with my girlfriend in September on the Discover Vietnam tour. Does anyone have any recommendations of any Vietnamese dishes or specialities we should try? Or perhaps ones we should definately avoid?

My...where shall I start. There are many dishes you should try when in Vietnam.
Pho Bo - This is the national dish. It's rice noodle in thin beef broth with beef. The meat can be well done or just cooked. If you would like to try the later, then ask for "pho bo tai." In the south you will get a side dish of vegetables. The locals will have this dish at anytime of the day as it's cheap anf filling. (it was about 50p in 2004)
Bun Cha- BBQ marinaded pork with a side dish of derivative of rice noodle with salads and dipping sauce.
Cha Ca - As bun cha but with fish
Banh Cuon - Hard to explain this one. It's a kind of soft savoury roll with dipping sauce. The roll's skin consist of a water and rice flour mixture, which are thinly spread over a steamerto cook. The fillings is mostly a mixture pork with spring onion dried mushrooms. The north make the best banh cuon because most of the time, it's done fresh. The south tends to pre-prepared them then heat it up in microwave.
These are just a few ideas from the tradtional dishes ofcourse there are many more and it's depends on which regions you are going to. Now you have a large fusion of dishes from around the world. You can also have any types of food you want including Chinese, Indian, Thai, Italian, French Spanish etc. oh and ofcourse KFC lol. I went trekking in the middle of nowhere, north west of hanoi in a place called Sa Pa. Not sure if it's still there now, but there was a English pub that did very good banger & mash and great pint of draught Guiness. LoL
